The Road to Wine
Owner Hideaki KOYAMA started his new endeavor relocating to Tomi-city in Nagano prefecture after working as an electronic system engineer. He challenged himself to plant grapevines cultivating a dormant old apple farm where it had been abandoned for many years. His company Rue de Vin was founded in 2008, followed by his winery establishment completed in 2010. At present he grows grapevines in his 5.5 ha estate and produce wines are of high quality without compromise.

Premium Apple Cider using Traditional Champagne Method
- Alcohol fermentation was conducted in low temperature in stainless tank by Champagne origin yeast, and cuvees were aged in oak barrels.
- The following aging process taken place for 12 – 24 months in 225L Bordeaux barrel.
- SO2 might be used in tiny amount during the production, nearly free of SO2 at finishing.
- Different vintage cuvees were blended and applied to second fermentation in bottle, which is exactly same method of making NV champagne.
- One-year duration of the second in-bottle fermentation is undertaken.
Bright yellow colour, intense of mix of ripen yellow, red apples, pear and toast note. This rich and elegant cider has complexity on palate performs to be good combination with savouries, tapas, and delicacies.
